One of my favorite things about Fall is that it is officially soup season! If you are looking for a soup to warm you up and make you feel all cozy inside, then this Cheeseburger Soup is definitely it. It is delicious and filling and falls into the comfort food category. Serve it with some warm sourdough bread and you have the perfect meal for a cold night.
When making the soup, you’ll notice in the ingredients list that there are many things that give cheeseburger soup it’s delicious flavor, including hot sauce. Don’t worry, this doesn’t add any spicy heat, it just gives the soup some extra flavor.
To make this cheeseburger soup a little more healthy, you can add vegetables like carrots and celery. My family might look at me a little cross eyed if I did that and say that I ruined a perfectly good soup. 😉 On the other hand, bacon makes an excellent soup topper.

Cheeseburger Soup
Ingredients
- 1 lb ground beef
- 4 cups potatoes diced
- 4 tbsp butter divided
- 5 cups chicken broth
- 1/2 onion diced
- 1 tsp parsley flakes
- 1 tsp basil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp hot sauce
- 3 tbsp flour
- 1 1/2 cups milk
- 2 cups shredded cheese
- 1/4 cup sour cream
- 1/2 lb bacon optional
Instructions
- Brown ground beef in a pan, drain grease and set aside.
- Peel and dice potatoes into small chunks.
- In a large saucepan melt 1 tablespoon of butter over medium heat. Add diced onion and cook for a few minutes until tender.
- Add chicken broth, potatoes, and spices and bring to a boil.
- Reduce heat and simmer for 10 minutes until potatoes are tender.
- In a small pot melt remaining 3 tablespoons of butter. Add flour and mix together for a couple minutes until you have a nice rue.
- Add rue to soup, bring to a boil and cook for 2 minutes, stirring occasionally.
- Reduce heat to low. Add cooked beef, milk, cheese, sour cream, and hot sauce. Cook and stir until cheese melts.
- Serve with extra shredded cheese and optional bacon bits.
