This has become my new favorite salad of the summer. It reminds me of a pasta salad that my mom made when I was growing up. She would make it with chicken and grapes and it was so delicious!

I kind of created this salad by accident one day. I had some leftover coleslaw and I decided to add some chicken to it for my lunch. I added some sliced grapes and oh my goodness, it was so good! It was lighter and more refreshing than a pasta salad. I had to buy more coleslaw ingredients so I could make it again and I’ve enjoyed this salad many times in the past few weeks.

There are only a few ingredients required to make this chicken coleslaw salad and it’s the perfect side dish for a BBQ or as is for a light lunch.

I just make one serving size for myself for lunch, but I will share the recipe for an entire salad.

If you would like an even more convenient way to make this salad you can use a coleslaw salad kit that comes with the dressing. I have found a coleslaw dressing that has a bit more flavor and I prefer it over the dressing that comes in the kits. It’s Marie’s Coleslaw Dressing and it’s delicious.

I use canned chicken in my salads. After I drain the water, I put the chicken in a small bowl and “shred” it to break up the chunks. Then I add a bit of seasoning to the chicken. I like using Nutritional Yeast. It’s kind of a flaky powder that resembles the taste of cheese. It’s a little healthier and adds good flavor without being too strong. You can also use seasoning salt or your favorite spice to season your chicken.

One last note before we get to the recipe, I like to cut my grapes in half when adding them to any type of salad. That way they aren’t rolling around on your plate and it’s easier to eat them with your salad.

Chicken Coleslaw Salad

A light and refreshing salad made with coleslaw, chicken and grapes.

Ingredients
  

  • 1 package coleslaw
  • 1 12 oz jar coleslaw dressing
  • 2 cans chicken
  • 1-2 tbsp seasoning salt
  • 1 bag grapes

Instructions
 

  • Open and drain cans of chicken.
  • Put chicken in a small bowl and "shred" with a fork. Add seasoning salt if you would like Add just enough until seasoned, but not too salty. I sometimes use Nutritional Yeast instead of seasoning salt.
  • Put coleslaw salad into a large bowl. Add chicken.
  • Rinse grapes and slice in half. You may only need to use half a bag of grapes depending on the size of your salad, I add them to the salad until it looks like the right amount.
  • Add coleslaw dressing a little bit at a time and mix well. You want the salad to be well coated, but not too soggy.
