In reality this is probably more like a yakisoba teriyaki stir fry since it contains yakisoba noodles, but we have always just called it chicken stir fry. I came up with this tasty dish a few years ago when I was craving teriyaki. However, we didn’t have a decent teriyaki food restaurant in town and I didn’t want to drive or pay the price for takeout.

I found some yakisoba noodles at the grocery store that we liked and just started playing around with ingredients to add to the stir fry. You can customize this to your liking, but our favorite ingredients to add to the noodles are chicken, bell peppers, peas (because we are not fans of broccoli) and pineapple chunks.

I used to buy pre-made teriyaki sauce from Costco. Yoshida’s Yakisoba Teriyaki Sauce is delicious. It’s great for marinating chicken and to use in a stir fry. However, I had a “healthy” moment and decided to start making my own teriyaki sauce. It only takes about 10 minutes and still tastes great. I follow this recipe from devourdinner.com as a base. I double the recipe and I use Glucomannan as the thickener. I also add a little extra garlic powder for some extra flavor.

This stir fry can come together in about 30 minutes. I’ve never actually used exact measurements or quantities for the ingredients. I usually just start adding some of each until it looks right. 🙂 I have included approximate measurements below though.

I start by making the teriyaki sauce and setting it aside so it can cool down a little bit. I then saute my veggies in a large nonstick pan with some extra virgin olive oil. Next I add some cooked diced chicken and the yakisoba noodles. The yakisoba noodles that I buy come in a package of 3 small packages of noodles. For my family, I use 2 of the small packages and put the other one in the freezer for later use.

The last step is to add the teriyaki sauce. I add a small amount at a time while stirring it all together until it looks right.

My husband enjoys this stir fry with some red pepper flakes sprinkled on top. He says it brings out the flavor of everything, especially the pineapple. So if you enjoy a little extra heat, give it a try.

Ingredients
  

  • 1 package yakisoba noodles
  • 2 cups cooked chicken cubed or shredded
  • 2 tbsp olive oil extra virgin
  • 1-2 bell peppers cut into slices
  • 1 cup frozen peas
  • 1 can pineapple chunks drained
  • 1-2 cups teriyaki sauce

Instructions
 

  • Start by making the teriyaki sauce if you are using the homemade recipe.
  • Heat extra virgin olive oil over medium heat in a large pan or wok.
  • Add vegetables and pineapple. Cook for a few minutes.
  • Add chicken and yakisoba noodles.
  • Slowly add teriyaki sauce while stirring everything together. Add just enough sauce until everything is well covered.
