There is nothing like a good comfort food casserole and this ham and potato casserole definitely fits into that category. It is creamy and delicious and easy to put together. It’s also a great way to use up leftover Easter ham.
I start by dicing 7 or 8 russet potatoes depending on how big they are. I usually leave the skin on, but you can peel them first if you prefer. Then boil the potatoes in a pot of water for about 10 minutes.
While the potatoes are cooking, start mixing the rest of the ingredients in a large bowl. Add 1 can of cream of chicken soup, 8 oz of sour cream and 1/4 cup of melted butter. Mix these together until smooth.
I like buying packages of diced ham just because it’s easy and convenient, but if you have leftover ham from Easter, or another big ham dinner, that also works well in this recipe. You will need about 2 cups worth of diced ham.
To the mixture in the bowl, add 1 1/2 cups of shredded cheddar cheese, 1/2 cup of chopped green onions, 2 cups of diced ham and the cooked potatoes. Mix well and pour mixture into a greased casserole dish.
The best part is the topping. It adds a nice finishing touch and a little bit of texture. Combine 2 tablespoons of melted butter with crushed Ritz crackers. Sprinkle over the top of casserole.
Bake at 350 for 45 minutes.
This casserole can also make a nice side dish. Just leave out the diced ham and you have a nice creamy potato casserole to go along with your ham dinner.
