Ham and potato casserole

A delicious comfort food casserole that is great for using up leftover ham.

Ingredients
  

  • 7-8 potatoes
  • 2 cups ham diced
  • 1/4 cup butter melted
  • 1 can cream of chicken soup
  • 8 oz sour cream
  • 1 1/2 cups cheddar cheese shredded
  • 1/2 cup chopped green onions
  • 2 tbsp melted butter
  • crushed Ritz crackers

Instructions
 

  • Dice potatoes and boil in water for 10 minutes.
  • Mix cream of chicken soup, sour cream and melted butter in a large bowl.
  • Add shredded cheese, chopped green onions, diced ham and cooked potatoes. Mix well.
  • Pour mixture into greased casserole dish. 
  • Combine crushed crackers with melted butter and sprinkle over the top of casserole.
  • Bake at 350 for 45 minutes.
