Ham and potato casserole
A delicious comfort food casserole that is great for using up leftover ham.

- 7-8 potatoes
- 2 cups ham diced
- 1/4 cup butter melted
- 1 can cream of chicken soup
- 8 oz sour cream
- 1 1/2 cups cheddar cheese shredded
- 1/2 cup chopped green onions
- 2 tbsp melted butter
- crushed Ritz crackers
Dice potatoes and boil in water for 10 minutes.
Mix cream of chicken soup, sour cream and melted butter in a large bowl.
Add shredded cheese, chopped green onions, diced ham and cooked potatoes. Mix well.
Pour mixture into greased casserole dish.
Combine crushed crackers with melted butter and sprinkle over the top of casserole.
Bake at 350 for 45 minutes.
