Chicken and Sausage Jambalaya

An easy one pot meal that is full of delicious flavor and a different take on traditional jambalaya.

Ingredients
  

  • 2 lbs cooked chicken chopped
  • 1 lb breakfast sausage browned
  • 2 tbsp extra virgin olive oil
  • 1 small onion diced
  • 1/2 cup bell pepper diced
  • 1/2 cup green onion sliced
  • 1/2 cup parsley chopped
  • 2 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 1/2 cups long grain rice
  • 3 cups chicken broth

Instructions
 

  • Brown sausage and set aside.
  • Heat olive oil in large pot over medium heat. Add chopped veggies and spices.
  • Saute for a few minutes.
  • Add chicken broth, rice, chicken and sausage. Make sure rice is covered. You may need to add a little water.
  • Cook uncovered for 20 minutes or until rice is cooked and liquid is absorbed.
