Chicken and Sausage Jambalaya

An easy one pot meal that is full of delicious flavor and a different take on traditional jambalaya.

- 2 lbs cooked chicken chopped
- 1 lb breakfast sausage browned
- 2 tbsp extra virgin olive oil
- 1 small onion diced
- 1/2 cup bell pepper diced
- 1/2 cup green onion sliced
- 1/2 cup parsley chopped
- 2 garlic cloves minced
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 1 1/2 cups long grain rice
- 3 cups chicken broth
Brown sausage and set aside.
Heat olive oil in large pot over medium heat. Add chopped veggies and spices.
Saute for a few minutes.
Add chicken broth, rice, chicken and sausage. Make sure rice is covered. You may need to add a little water.
Cook uncovered for 20 minutes or until rice is cooked and liquid is absorbed.
