Pumpkin Chocolate Chip Muffins

A delicious pumpkin chocolate chip muffin that's perfect for breakfast or an afternoon snack with a cup of coffee.

Ingredients
  

  • 4 eggs
  • 2 cups sugar
  • 1 14 oz can pumpkin puree
  • 1 1/2 cups oil
  • 3 cups flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 2 cups chocolate chips

Method
 

  1. In a large bowl, add eggs, sugar, pumpkin pie puree and oil. Mix well.
  2. Add flour, baking soda, baking powder, cinnamon and salt. Mix well and then fold in chocolate chips.
  3. Line muffin tin with muffin cups and fill each 3/4 full with batter. 
  4. Bake at 400 degrees for 16 minutes.
