Strawberries n' Cream Baked Oatmeal

A delicious baked oatmeal served with maple syrup.

Ingredients
  

  • 4 C old fashioned oats
  • C brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 4 C heavy cream
  • 2 large eggs
  • 6 TBSP butter melted
  • 3 tsp vanilla
  • 2 C diced strawberries
  • maple syrup for serving

Method
 

  1. Preheat oven to 350°. Grease a 9 x 13 baking dish. Melt butter in pot on medium/low heat.
  2. In a large bowl, stir together oats, brown sugar, baking powder, cinnamon and salt.
  3. In a separate bowl, whisk together heavy cream, egg, melted butter, and vanilla.
  4. Pour heavy cream mixture over oats and stir until combined. Add diced strawberries and stir mixture.
  5. Pour into baking dish. Bake for 40 minutes or until top is golden brown and middle is cooked through.
    I like it a little less soggy, so after 40 minutes I check it, and then cook for an additional few minutes until done.
  6. Serve with maple syrup.

Notes

You can make this recipe dairy-free by using oat milk or dairy-free cream and dairy-free butter. This recipe can also easily be cut in half for a smaller group of people.
