Method
- Preheat oven to 350°. Grease a 9 x 13 baking dish. Melt butter in pot on medium/low heat.
- In a large bowl, stir together oats, brown sugar, baking powder, cinnamon and salt.
- In a separate bowl, whisk together heavy cream, egg, melted butter, and vanilla.
- Pour heavy cream mixture over oats and stir until combined. Add diced strawberries and stir mixture.
- Pour into baking dish. Bake for 40 minutes or until top is golden brown and middle is cooked through. I like it a little less soggy, so after 40 minutes I check it, and then cook for an additional few minutes until done.
- Serve with maple syrup.
Notes
You can make this recipe dairy-free by using oat milk or dairy-free cream and dairy-free butter. This recipe can also easily be cut in half for a smaller group of people.
