These cookies are simple and easy to make and they are great for any occasion. They always remind me of Christmas. I know they are not your traditional Christmas cookie, but I used to make them for my office Christmas parties and they were a huge hit. They are my husband’s favorite cookie and he devours them every time I make them.
To start you will need 8 ounces of softened cream cheese. I always take a block of cream cheese out of the fridge an hour or two before I start making the cookies and set it aside on the counter to soften.
You will also need 18 oz of refrigerated chocolate chip cookie dough and a mini muffin pan. I like to buy the cookie dough that comes in 24 little squares.
With floured hands, break apart each square and press one square (about 1 tablespoon) of dough onto the bottom and up the sides of 24 mini muffin cups. Bake at 350 for 10-12 minutes.
Remove the pan from the oven and use the end of a wooden spoon handle to reshape the puffed cookie cups. Let the cookies cool in the pan for a few minutes before removing and putting on a cooling rack. I have word of advice on removing the cookies from the muffin cups. I used to try and remove them with a butter knife, but the tops of the cookies would break apart from the bottoms. The bottom parts of the cookie are much softer than the top. To keep this from happening, twist the cookie a little bit to loosen it, then remove it from the pan. The cookie will come out in one piece.
To make the cream cheese filling you will need 8 oz of softened cream cheese, 4 tablespoons of softened butter, 1 1/2 cups of powdered sugar, and 1 tsp of vanilla extract. Mix the cream cheese, butter and vanilla until smooth and then slowly add the powdered sugar and mix well. Use a small spoon to fill the cookie cups with the cream cheese frosting.
These cookies are pretty hard to resist and stop eating at just one. When you aren’t enjoying these delicious little morsels, keep them in the fridge.
Chocolate chip cookies with cream cheese filling
Ingredients
- 1 package refrigerated chocolate chip cookie dough
- 8 oz cream cheese softened
- 4 tbsp butter softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla
Instructions
- Preheat oven to 350
- Put one square (1 tablespoon) of cookie dough in each spot in mini muffin pan. Mold dough up sides of each cup. Bake at 350 for 10-12 minutes.
- Remove from oven and use the end of a wooden spoon handle to reshape the puffed cookie cups. Let cookies cool in the pan for a few minutes and then gently twist each cookie before removing and placing on cooling rack.
- Mix cream cheese, butter and vanilla. Slowly add powdered sugar and mix well.
- Use a small spoon to fill each cookie cup with cream cheese frosting.
- Keep refrigerated.
