One of my favorite quick and easy go-to meals is this Chicken Alfredo. It comes together in less than 30 minutes and only requires 8 ingredients. I usually have all of them on hand in my fridge and pantry so I can quickly whip this meal up if I need a last minute dinner idea. This is also one of my kids’ favorite meals. They always go back for 2nds and 3rds and there are never any leftovers.

The key I have found to making a thick, flavorful sauce is to use freshly pressed garlic and make a roux with butter and flour. Once you start making this homemade alfredo sauce I promise you won’t want to go back to store bought sauce again.

The nice thing about this recipe is that it’s easily adaptable. I add peas to this dish to make sure my kids get their serving of veggies in. You can also double or triple this recipe if needed for larger crowds. Grab some garlic bread and throw together a Caesar salad and you’ve got yourself a quick, easy and delicious meal people will think you’ve spent hours on.

Quick and Easy Chicken Alfredo

Ingredients
  

  • 2 cups cooked chicken shredded or cubed
  • 8 oz pasta fettuccini, penne, or bowtie
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cloves garlic minced
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup frozen peas optional
  • shredded parmesan cheese for topping

Instructions
 

  • Cook chicken and shred or cut into 1 inch cubes. You can also buy a cooked rotisserie chicken and use the chicken from that.
  • Boil pasta for 8 minutes. My favorites to use for this dish are penne or bow tie pasta. Drain pasta and set aside.
  • In a large skillet, heat butter over medium heat. Once butter is melted, add crushed garlic. Cook for a couple minutes, stirring constantly so garlic doesn't burn.
  • Add 2 tbsp of flour and stir constantly until thickened. Slowly add chicken broth, stirring as you go until flour mixture and broth are completely combined.
  • Add heavy cream and stir. Reduce heat to medium/low. Let sauce cook for a couple minutes to thicken.
  • Add 1/2 cup of parmesan cheese and stir until cheese melts. Add cooked chicken, pasta and optional peas. Stir and cook for a few minutes until peas are cooked.
  • Serve with extra parmesan cheese on each individual plate.
