If you are looking for a somewhat healthy, quick and easy meal, this kielbasa sausage and potato hash is it. I love throwing this together on busy nights and my family loves it too.

This recipe is pretty adaptable as far as the quantity of ingredients depending on how many you are cooking for.

Kielbasa

My kids love the sausage more than anything else, so I double up on the amount of kielbasa. You can use just one package if that’s all you need. There are a few different varieties of kielbasa sausage, so pick your favorite.

Potatoes

I cook the potatoes separately in a cast iron pan, but you can use whatever you have and cook it together all in one pan if you wish. I like to use Johnny’s Seasoning Salt to season the potatoes, but I’ve also used a mixture of different seasonings. Garlic and onion powder, oregano, a little paprika. It’s all good. Whatever seasoning you like on roasted potatoes will taste good in this dish.

Onions and peppers

My kids are not a huge fan of onions and peppers, so I don’t include a lot of those in this dish. They are pretty much for just my hubby and me. I just quarter an onion and peel apart the slices and put them in. I use mini sweet peppers in all of my cooking so I just cut a few of those into large slices and add them to the sausage mixture. You can also use regular bell peppers in your favorite colors. My favorites are red, yellow and orange because they are sweeter.

Kielbasa Sausage and Potato Hash

Ingredients
  

  • 1-2 pkg(s) kielbasa sausage (pork or beef)
  • 4 medium potatoes cubed
  • 1/2 onion
  • 1-2 red and yellow bell peppers sliced
  • seasoning salt
  • 2 tbsp extra virgin olive oil

Instructions
 

  • Peel and cut potatoes into half inch cubes.
  • Heat oil in cast iron or non-stick pan over medium heat.
  • Add potatoes and sprinkle seasoning salt or your favorite seasonings over potatoes.
  • Cook potatoes, stirring every once in awhile, until roasted and golden brown. Add extra oil and spices if needed.
  • Cut kielbasa into 1/8 to 1/4 inch slices.
  • Heat large wok or non-stick frying pan over medium heat. Add kielbasa and cook until the edges start to get a little crispy, about 10 minutes.
  • Meanwhile, cut onion in half, then half again if needed and peel apart the slices.
  • Cut bell peppers into thick chucks or slices, whichever you prefer.
  • Add onion and peppers to kielbasa pan and cook for another 5 minutes, until peppers and onion are tender.
  • You can remove from heat and mix in the roasted potatoes or serve them separately.
