Peel and cut potatoes into half inch cubes.
Heat oil in cast iron or non-stick pan over medium heat.
Add potatoes and sprinkle seasoning salt or your favorite seasonings over potatoes.
Cook potatoes, stirring every once in awhile, until roasted and golden brown. Add extra oil and spices if needed.
Cut kielbasa into 1/8 to 1/4 inch slices.
Heat large wok or non-stick frying pan over medium heat. Add kielbasa and cook until the edges start to get a little crispy, about 10 minutes.
Meanwhile, cut onion in half, then half again if needed and peel apart the slices.
Cut bell peppers into thick chucks or slices, whichever you prefer.
Add onion and peppers to kielbasa pan and cook for another 5 minutes, until peppers and onion are tender.
You can remove from heat and mix in the roasted potatoes or serve them separately.
