I am personally not a fan of regular oatmeal. It is too mushy. So I’ve avoided eating oatmeal for most of my life until I tried this strawberries n’ cream baked oatmeal. My sister-in-law made it for us when we were staying with them once, and I liked it so much that I had to ask her for the recipe.

What is baked oatmeal?

The biggest difference between regular oatmeal and baked oatmeal is the texture. Regular oatmeal is more msuhy. However, since baked oatmeal is cooked in the oven, it has a firmer texture. When I make it, I like to add fruit to my baked oatmeal, like strawberries or blueberries.

How do you make baked oatmeal?

To make baked oatmeal, you start by adding the dry ingredients in a large bowl. Mix those together and then add the wet ingredients. Next, you will mix it all together, pour it into a greased 9 x 13 pan, and bake it in the oven for about 40 minutes.

It’s perfect to serve guests or for meal prep

This breakfast dish is perfect to serve to your overnight guests. It’s easy to make and it makes your house smell amazing while it’s cooking in the oven. I like to serve it with maple syrup poured over individual portions. It is also perfect for meal prep for those busy mornings. If you have any baked oatmeal leftover, it’s good stored in the refrigerator and reheats wonderfully.

Strawberries n’ Cream Baked Oatmeal

A delicious baked oatmeal served with maple syrup.

Ingredients
  

  • 4 C old fashioned oats
  • C brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 4 C heavy cream
  • 2 large eggs
  • 6 TBSP butter melted
  • 3 tsp vanilla
  • 2 C diced strawberries
  • maple syrup for serving

Method
 

  1. Preheat oven to 350°. Grease a 9 x 13 baking dish. Melt butter in pot on medium/low heat.
  2. In a large bowl, stir together oats, brown sugar, baking powder, cinnamon and salt.
  3. In a separate bowl, whisk together heavy cream, egg, melted butter, and vanilla.
  4. Pour heavy cream mixture over oats and stir until combined. Add diced strawberries and stir mixture.
  5. Pour into baking dish. Bake for 40 minutes or until top is golden brown and middle is cooked through.
    I like it a little less soggy, so after 40 minutes I check it, and then cook for an additional few minutes until done.
  6. Serve with maple syrup.

Notes

You can make this recipe dairy-free by using oat milk or dairy-free cream and dairy-free butter. This recipe can also easily be cut in half for a smaller group of people.
